Matcha Bitsu-Bitsu
Reading dango in Ikesen made me hungry. So, i decided to make a post-colonial version. Since Philippines is a post-colonial space, our food are mostly a marriage of Spanish and Asian styles.
So, we have this snack called Cascaron or bitsu-bitsu. I am guessing it's reated to the Cascaron is related to the Mexican treats served on the Day of the Dead. Like in our house, we do offer rice treats on the day of the dead.
櫃 H/Bitsu is actually a rice box. I think the name refers to that as well. But, overall, in cooking-style, this refers to Buñuelos, or fried dough. Instead of a regular flour, we use rice flours--- making it more Asian food. Then, we do mix tropical fruitd like coconut or jack fruit.
The sauce is usually made of coconut milk and sugar.
