This warm rainbow vegetable soup is full of bright flavors and colors. This meal is full of healthy vegetables and is perfect for cold days because it is comforting and good for you.
Ingredients: 1 cup chopped red bell pepper. 1 cup chopped yellow bell pepper. 1 cup chopped green bell pepper. 1 cup chopped carrots. 1 cup chopped zucchini. 1 cup chopped red cabbage. 1 cup chopped tomatoes. 4 cups vegetable broth. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a big pot, heat the olive oil over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Bell pepper, carrots, zucchini, red cabbage, and tomatoes should all be chopped up and put in the pot. Put in the vegetable broth and raise the heat. Put the lid on and cook for 15 to 20 minutes, or until the vegetables are soft. Add pepper and salt to taste. Serve hot with fresh parsley on top.
