This veggie stir-fry is great for a busy weeknight dinner because it's quick and easy to make. It tastes great and is good for you because it's full of colorful vegetables and savory flavors.
Ingredients: 2 cups mixed vegetables e.g., bell peppers, broccoli, carrots. 1 tablespoon vegetable oil. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 tablespoon hoisin sauce. 1 teaspoon sesame oil. 1/4 cup chopped green onions. Salt and pepper to taste. Cooked rice or noodles, for serving.
Instructions: Put vegetable oil in a big pan or wok and heat it over medium-high heat. Mix in the garlic and cook for one minute, until the garlic smells good. Stir-fry the vegetables for 5 to 7 minutes, until they are tender but still crisp. Put soy sauce, hoisin sauce, and sesame oil in a small bowl and mix them together. Pour the sauce over the vegetables and toss them around to cover them all. Add two to three more minutes of cooking time until everything is hot. Add pepper and salt to taste. Add some chopped green onions as a garnish. Top with hot rice or noodles that have been cooked.
