Ingredients: 2 cups rolled oats. 1 cup mashed ripe bananas. 1/4 cup maple syrup. 1/4 cup almond butter. 1/4 cup dairy-free chocolate chips. 1/4 cup chopped nuts optional. 1 tsp vanilla extract. 1/2 tsp cinnamon. 1/4 tsp salt.
Instructions: Preheat oven to 350F 175C. Grease a baking dish. In a large bowl, mix together mashed bananas, maple syrup, almond butter, and vanilla extract until smooth. Add rolled oats, cinnamon, salt, and mix until well combined. Fold in chocolate chips and chopped nuts, if using. Press the mixture evenly into the prepared baking dish. Bake for 25-30 minutes or until golden brown and firm to touch. Let it cool completely before slicing into bars. Enjoy as a healthy vegan snack!
