A Paleo-friendly twist on the traditional New Year's Day dish for prosperity. This Pork and Sauerkraut recipe is packed with flavor and made without grains or dairy.
Ingredients: 2 pounds pork shoulder, cut into chunks. 1 onion, chopped. 2 cloves garlic, minced. 1 tablespoon coconut oil. 1 teaspoon caraway seeds. 1 teaspoon dried thyme. 1 teaspoon black pepper. 1/2 teaspoon sea salt. 1 cup sauerkraut, drained and rinsed. 1/2 cup chicken broth.
Instructions: Heat coconut oil in a large skillet over medium-high heat. Add pork chunks and cook until browned on all sides, about 5 minutes. Remove pork from skillet and set aside. In the same skillet, add chopped onion and minced garlic. Saut until softened, about 3 minutes. Return the browned pork to the skillet and add caraway seeds, dried thyme, black pepper, and sea salt. Stir to combine. Pour in the chicken broth and bring to a simmer. Cover and cook for 30 minutes, or until pork is tender. Stir in the sauerkraut and cook for an additional 10 minutes, allowing flavors to meld. Serve hot, and enjoy your Paleo Pork and Sauerkraut!
