Beef Barley Soup is a hearty and tasty way to use up leftover prime rib. This simple recipe is great for a cozy meal because it's full of healthy foods.
Ingredients: 2 cups cooked prime rib, shredded. 1 cup barley. 1 onion, diced. 3 carrots, sliced. 3 celery stalks, chopped. 4 cloves garlic, minced. 8 cups beef broth. 1 can 14 oz diced tomatoes. 2 bay leaves. 1 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onions, carrots, celery, and minced garlic. Saut until vegetables are tender. Stir in shredded prime rib and cook for an additional 2 minutes. Add barley, diced tomatoes, bay leaves, dried thyme, salt, and pepper. Mix well. Pour in beef broth and bring the soup to a boil. Reduce heat, cover, and simmer for 30-40 minutes or until barley is tender. Remove bay leaves before serving. Adjust seasoning if necessary. Serve hot and enjoy!
