This is a hearty and flavorful Mediterranean dish made with couscous, diced potatoes, shrimp, and calamari in a tomato-based sauce.
Ingredients: 1 cup couscous. 1 cup water. 1/2 lb shrimp, peeled and deveined. 1/2 lb calamari rings. 2 medium potatoes, peeled and diced. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1/2 cup chicken broth. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Set olive oil on medium heat in a large pan. Put in the minced garlic and chopped onion. Saut until the onion turns clear. After you add the diced potatoes, cook for about 5 minutes while stirring every now and then. Add paprika and cayenne pepper to make it taste better. Add the chicken broth and diced tomatoes. Add pepper and salt. Wait 10 minutes and then serve. Bring 1 cup of water to a boil and set aside while the sauce simmers. Put in the couscous, cover, and take it off the heat. After 5 minutes, use a fork to fluff it up. Fish rings and shrimp should be added to the tomato sauce. After 5 to 7 minutes, the seafood should be fully cooked. Put the couscous on plates and pour the seafood and potato-tomato sauce on top of it. Add some fresh parsley and paprika on top to make it look nice and add some color.
