Ingredients: 1.5 lbs pork shoulder, cubed. 1 cup couscous. 1 can 14 oz diced tomatoes. 1 onion, finely chopped. 3 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 cup chicken broth. 1/2 cup red wine. 2 tablespoons tomato paste. 2 teaspoons dried oregano. 1 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish.
Instructions: Add salt and pepper to the pork cubes. Warm up the olive oil in a big pot over medium-high heat. The pork cubes should be browned all over. Take it out and set it aside. You can put onions, garlic, carrots, and celery in the same pot. Cook the vegetables in oil until they get soft. Add the tomato paste and cook for two minutes. To clear the pot, add red wine. Put the pork back in the pot after it has been browned. Chicken broth, oregano, thyme, salt, and pepper should be added. Bring to a low boil. Cover and cook on low heat for an hour and a half to two hours, or until the pork is tender and the flavors blend. Follow the directions on the package to make couscous.
