Ingredients: 3 lbs ripe plums, pitted and quartered. 1 cup granulated sugar. 1 tablespoon lemon juice. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg.

Instructions: In a large saucepan, combine plums, sugar, lemon juice, cinnamon, ginger, cloves, and nutmeg. Bring mixture to a boil over medium-high heat, stirring frequently. Reduce heat to low and let simmer, uncovered, for 1 to 1 1/2 hours, or until mixture has thickened and coats the back of a spoon. Remove from heat and let cool slightly. Using an immersion blender or food processor, blend mixture until smooth. Transfer plum butter to sterilized jars and seal tightly. Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.
