Ingredients: 2 cups cooked quinoa. 1 cup diced avocado. 1 cup cherry tomatoes, halved. 1/2 cup diced cucumber. 1/4 cup chopped fresh cilantro. 1/4 cup sliced almonds. 2 tablespoons lemon juice. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Cooked quinoa, diced avocado, cherry tomatoes, diced cucumber, chopped fresh cilantro, and sliced almonds should all be put in a large bowl. Mix lemon juice, olive oil, salt, and pepper in a small bowl with a whisk. Add the dressing to the quinoa mixture and mix it together gently. Serve right away or put in the fridge until you're ready to serve.
