The Bumbo . 2oz dark rum 2oz hot water 1/2oz fresh lime juice 1tsp sugar (preferrable Demarara) 2 pinches of cinnamon Fresh grated nutmeg Lime wheel . Add the sugar and the water in a mixing glass and stir until the sugar is dissolved. Add the rum and lime and cinnamon to taste and stir again until the cinnamon is incorporated. Add ice to the mixing glass and stir for 30 seconds, the strain into a Collins or highball glass filled with ice. If served hot, exclude the ice, and warm until the mixture is hot and pour into a mug. Grate fresh nutmeg over the top and serve. . I made this primarily for research purposes (yes – I do that) and didn’t have particularly high expectations. It is a drink created by pirates to distinguish it from the Grog served to the sailors of the British Royal Navy, which itself is no highlight drink. I made mine cold, as a long drink – because I am not a pirate. Many of the recipes talk about how it could be served at Christmas, and it actually fits the bill. The cinnamon and nutmeg would have originally been added to hide the taste of the awful rums distilled at the time – but it ends up having a nice Christmas spice taste and smell to it. You could make up a batch and have it in a crockpot, grating fresh nutmeg over the surface once in the mug. . Navy Grog and Bumbo (or Bombo, or Bumboo) were drinks given to sailors as a retention tool. The British invaded Jamaica in 1655, and rum became part of the life of the Caribbean sailor. Life at sea was hard and brutal. But at least you were given rum every day. The lime was added when available to help with scurvy. Bumbo made its way onto the mainland and was a popular drink in the Colonies, as it is far better tasting than Grog.
