✿ プチフール | Petit Four ・一口サイズの小さなお菓子の総称。その起源は19世紀頃のフランスで考案されたといわれており、当時は調理に石窯やレンガのオーブンが使用されていました。これらは温度調節が難しく、肉類やパンなどの高温調理の後にその余熱を利用してお菓子を焼いていたことから “Petit Four” =「小さな窯」と名付けられたそうです。カクテルパーティーやビュッフェ式の食事などで提供されることがあります。 ・フランスのパティスリーは小さなデザート類の詰め合わせをミニャルディーズ(mignardises)と呼び、固いバター分の多いクッキー類の詰め合わせをプチフールと呼ぶ。
