These Easy Pecan Pie Crust Cookies combine the rich flavors of pecan pie with the buttery goodness of a cookie for a delectable treat. Ideal for snacking or as a sweet finish to any meal!
Ingredients: 1 cup pecans, finely chopped. 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the powdered sugar in a bowl until the mixture is light and fluffy. It's important to mix the butter and salt well after adding the vanilla extract. Slowly add the all-purpose flour and chopped pecans to the mixture while stirring it all together. Make a ball out of the dough and put it in the fridge for 30 minutes to firm up. After the dough has been chilled, make little balls out of it. Once the baking sheet is ready, put the balls on it and use the back of a fork to gently flatten each one. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. The Pecan Pie Crust Cookies are ready to eat once they have cooled down.
