Eggplant Parmigiana : 🍆Eggplant, cut 2cm slices 🌾Flour 🥚Egg, 1 🥛Milk, 1 tablespoon 🍞Breadcrumbs, panko 🌿Dried thyme 🧀Cheese 🥫Basic tomato sauce Extra virgin olive oil 🧂Salt : 1️⃣Salt cut sides of eggplant and let sit for 30mins - 1 hour, then rinse with water and pat dry. 2️⃣Coat eggplant in flour, then coat with egg mixed with milk and then coat with breadcrumbs mixed with salt and thyme. 3️⃣ Pan fry in extra virgin olive oil until golden on each side. 4️⃣ Place in oven proof dish, top with basic tomato sauce and bake for 25mins at 180*C.
