This recipe is a copycat of Panera Bread's tasty Fuji Apple Chicken Salad. The soft chicken, crisp Fuji apples, sweet cranberries, crunchy pecans, and tangy Gorgonzola cheese, all drizzled with balsamic vinaigrette dressing, go together perfectly.
Ingredients: 2 boneless, skinless chicken breasts. 1 tablespoon olive oil. Salt and pepper to taste. 8 cups mixed greens e.g., Romaine, arugula, spinach. 1 Fuji apple, thinly sliced. 1/2 cup dried cranberries. 1/2 cup pecans, toasted and chopped. 1/4 cup Gorgonzola cheese, crumbled. 1/4 cup red onion, thinly sliced. 1/4 cup balsamic vinaigrette dressing.
Instructions: Turn on your oven and heat it up to 375F 190C. On both sides, salt and pepper the chicken breasts. Warm up the olive oil in a skillet that can go in the oven over medium-high heat. After you add the chicken breasts, cook them for two to three minutes on each side, or until they turn brown. Place the skillet in an oven that has already been heated and bake for 20 to 25 minutes, or until the chicken reaches 165F 74C inside. After taking the chicken out of the oven, let it rest for a few minutes. Then, cut it into thin strips. Mixed greens, dried cranberries, toasted pecans, crumbled Gorgonzola cheese, and red onion should all be put in a large salad bowl together. Place the chicken breast slices on top of the salad.
