Ingredients: 150g almond flour. 150g powdered sugar. 3 large egg whites. 50g granulated sugar. 1/4 tsp saffron threads. 1/4 cup canned pumpkin puree. 1/4 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp vanilla extract. Orange food coloring optional. Pumpkin-shaped sprinkles optional.
Instructions: In a food processor, combine almond flour and powdered sugar. Pulse until finely ground. Sift the mixture into a bowl and set aside. In a small bowl, crush the saffron threads with a spoon, then mix them with a tablespoon of warm water. Let it steep for 5 minutes. In a clean, dry mixing bowl, beat the egg whites until foamy. Gradually add granulated sugar and continue to beat until stiff, glossy peaks form. Carefully fold the sifted almond flour and powdered sugar mixture into the egg whites until you get a smooth batter. Add the saffron-infused water, canned pumpkin puree, ground cinnamon, ground nutmeg, and vanilla extract. Fold until well combined. If desired, add orange food coloring to achieve a vibrant pumpkin color. Transfer the batter to a piping bag with a round tip. Pipe small rounds onto a parchment paper-lined baking sheet, leaving space between each macaron. Tap the baking sheet on the counter to remove air bubbles and let them rest for 30 minutes. Preheat your oven to 300F 150C. Bake the macarons in the preheated oven for 15-18 minutes, or until they have formed a firm shell and are no longer sticky to the touch. Remove the macarons from the oven and let them cool completely on the baking sheet. Once cooled, match up macaron shells of similar size and sandwich them together with a dollop of pumpkin buttercream or your preferred filling.
