Ossenworst (Raw Beef Sausage).

Anyway,,,

Probably not the most flattering photograph that I have ever taken of food, but this is ossenworst. Or in other words... ox sausage.

It’s a little bit misleading, because it’s actually beef sausage but traditionally this was made using ox meat. And this isn’t just any normal sausage. Oh no. It’s a raw sausage!

Basically, ossenworst is made using lean beef, minced, and mixed with spices such as pepper, cloves, mace and/or nutmeg. This mix is piped into a plastic tube en daar heb je het! That doesn’t sound quite so glamorous, though originally the meat is normally smoked at a low temperature which maintains the raw texture but enhances the flavour of the meat.

Dutch people tend to use them as sandwich fillings but it is also eaten with pickled onions - zilveruitjes - or Dutch mustard (this is to help the digestion of the raw meat).

This is what my mother bought for me. Something you can only found in Holland.
