My favorite herb is lemongrass! It’s yummy and versatile.
It makes a delicious tea (especially when iced), adds a bit of brightness to your flavor profile when cooking meats or poultry, supposedly can help balance facial oils, and when planted outside your home can act as a mosquito repellant (the oil from this plant is one of the major components of citronella candles).
If you want to use it for tea, I recommend getting it already dried, as I find this makes the flavor of the tea stronger. Fresh lemongrass can be used as well, simply finely chop the stalks before boiling (use a serrated knife [lemongrass is very fibrous and can be tough] or run pulse it a little in a food processor).

Thank you! This is very useful information. I think there’s some lemongrass still growing in the abandoned garden my mother planted in the median in the street outside our old house before she moved across the country. Garden has since gone feral and is mostly a tightly-packed snarl of angry rosemary and lavender but I think I can find the lemongrass if I wade in deep. Good to know about the poultry, I’m always looking for slightly different ways to cook chicken than the three ways I always cook chicken. If you have recs on what herbs it’s best combined with I’d love to hear them.
