Burger & Brew Fest 2020 Take 2, Round 7 - Oliver’s
When the list of participants in the relaunch of Burger & Brew Fest was released, one of the new (and somewhat surprising) entrants was Oliver’s. While they have had a burger or two on their takeout menu for a while, they have avoided entering any contests. One thing is for sure, they didn’t take it easy with their first effort, Oliver’s Twist: fresh potato bun, handmade 8oz beef patty, crispy pork belly, baby arugula, creamy havarti cheese, rhubarb, apple and chili chutney, cucumber raita. That is a lot of flavour and a lot of meat, but when much is promised much is expected.
Honestly, this burger was masterfully constructed. Eight ounces of beef in addition to pork belly could have made for a hard-work stack of meat. The addition of two different sauces ensured that didn’t happen. The chutney in particular was a work of art, providing a tart hit with a hint of sweet and the odd parcel of punch from the finely-chopped bird’s-eye chilis in it. If you are not a fan of spice you should be able to manage this, but the chilis do carry a potency.
You can see from the picture that the char on the patty is impressive, but it retained its juiciness very well. The havarti, an unusual choice to top a burger, undoubtedly helped there. The creaminess also tempered the sour notes from the rhubarb and apple.
The pork belly was a little on the tough side, but not enough to harm the overall enjoyment of the burger. However if it had been more crispy than chewy, that extra texture variety would have improved the whole package. That lack of a crunch was the only true downside, and although the arugula tried it was never going to carry that fight on its own. It did work with the raita to bring some freshness though, which was needed with so many rich flavours. Again, this speaks to the genius in putting this together. All the ingredients worked together to ensure that nothing overwhelmed but nothing got lost, leaving a clear leader in the competition so far. Go out and get this burger!

I hope you well It's time for a few barbecuing tips Okay, tip number one Make yourself a herb brush Really, really cool
Basically any woody herbs Rosemary, thyme, sage, bay, oregano Tie it on to a spoon or a stick and just put it in some oil and put it all around meat, fish, flat breads, vegetables It's absolutely fantastic It keeps things moist and delicious but adds a beautiful layer of flavor and it does a really, really good job
Must try that Tip number two Next time you're in the garden center and you see those little water spritzes, brilliant Get a couple of those Write on it vinegar, okay? Do some flavored vinegars
Chili, some herbs, some red white wine vinegar in there Spritz that on your meat as it starts to sizzle and as you turn it It's good for two things, amazing for flavor and two it keeps those flames down and stops you burning your meat as well Tip number three Whether working on gas or charcoal or wood fires
Always try to have a hot area and a cool area and ideally have it graduating from one to the other This way you can have direct heat, get color and caramelization and then take it through and just finish it off and then slow cook it, so it's sweet and delicious and gorgeous Next thing, flavored salts They're brilliant Especially for delicate things like pork, chicken and seafood
Just smash up any herbs of your choice Spices, chilies, ginger Get a combination that you love Smash it up to a pulp and then add in salt Let it dry on a tray and then smash it up again
It will last for a couple of months and that just simply on a piece of fish or beautiful vegetables will make so much difference Gorgeous flavor, really subtle Next if you want incredible meat with an amazing flavor around the outside If you use regular steaks or chops, cut like that big They're going to be cooked so quickly
You'll never be a get the proper color on it, so get a double or a triple steak or chop, okay? This way you can spend a bit more time getting that beautiful bark as we call it It's caramelized and got that amazing flavor and it's still blushing and juicy in the middle Invest in that and your barbecues will never be the same again As you know I am very passionate about cooking outside and all the fun to be had with friends and family and beautiful food So me and my barbecue team have been beavering away and we've created some amazing products for you guys to check out

Cup of coffee? Tasty sandwich? Slice of cake anyone?
If you're visiting Derby for business or pleasure then without a doubt you're going to be there at a time during the day that falls upon a mealtime. Whether it be breakfast, brunch, lunch, afternoon tea or early dinner time, you're going to want to visit Oliver's to satisfy your thirst or hunger.
We're not just saying this because we recently helped get this lovely New York Deli style eatery looking as great as it does with our upcycled creations, we genuinely enjoy the culinary delights on offer. So next time you're in the city, take yourself in for a tasty treat.
Whilst you're at it, take a look at the work we've done to help contribute to the ambiance of the place.
The first thing we hope you'll notice is the warm and cosy atmosphere. Lighting contributes significantly to creating the perfect ambiance, and so our main feature lights made from iron pipework give off that overall sense of industry, without making it seem 'cold'. In fact it's quite the opposite!
Even when it's cold and rainy outside, you only need to pop inside Oliver's to feel warm, relaxed and right at home. When you pass from the outside, you can feel the warmth radiating from the inside, out.
We also created some great places for storage and display using upcycled scaffold boards, adding to that vintage style but also adding a rustic feel. Again this helps contribute to bringing that all round outside/inside vibe. There's something for everyone to associate with.
This has been such a wonderful project to work on, and we're sure that Oliver's will continue to make it's customers feel just as warm and welcomed as we did during the installation.
So next time you are in the area, stop on by for your favourite hot drink, a sandwich, or treat yourself to a slice of one of their amazing cakes! (Our favourite was the mojito cheesecake). Grab a paper from the horseshoe paper rack creation and take some time out from your day.
