Ingredients: 1 cup barley, cooked. 200g smoked salmon, sliced. 1 avocado, sliced. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup cucumber, diced. 2 tablespoons capers. 1/4 cup Greek yogurt. 2 tablespoons lemon juice. 1 tablespoon olive oil. Salt and pepper to taste. Fresh dill for garnish.
Instructions: Cooked barley, smoked salmon, avocado slices, cherry tomatoes, red onion, cucumber, and capers should all be put in a bowl together. To make the dressing, mix the Greek yogurt, lemon juice, olive oil, salt, and pepper in a separate small bowl. Pour the dressing over the barley and toss it around a little to coat it.
