Ingredients: For the nougat:. 1 cup creamy peanut butter. 1/4 cup maple syrup. 1/4 cup coconut flour. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/4 teaspoon salt. For the caramel:. 1 cup pitted dates, soaked in hot water for 15 minutes. 1/4 cup creamy peanut butter. 2 tablespoons coconut oil, melted. 2 tablespoons almond milk. 1 teaspoon vanilla extract. 1/4 teaspoon salt. For assembling:. 2 cups roasted peanuts. 1 cup dairy-free chocolate chips. 1 tablespoon coconut oil.
Instructions: Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. To make the nougat, in a medium bowl, mix together peanut butter, maple syrup, coconut flour, melted coconut oil, vanilla extract, and salt until well combined. Press the nougat mixture evenly into the bottom of the prepared pan. To make the caramel, drain the soaked dates and place them in a food processor along with peanut butter, melted coconut oil, almond milk, vanilla extract, and salt. Process until smooth, scraping down the sides as needed. Spread the caramel evenly over the nougat layer, then sprinkle roasted peanuts on top, pressing them down gently into the caramel. Place the pan in the freezer for at least 1 hour, or until firm. Once firm, remove the candy from the pan using the parchment paper overhang and place it on a cutting board. Using a sharp knife, cut the candy into bars. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth. Dip each candy bar into the melted chocolate, coating it completely, then place it back on the parchment-lined baking sheet. Return the bars to the freezer for 10-15 minutes to allow the chocolate to set. Store the vegan Baby Ruth candy bars in an airtight container in the refrigerator for up to two weeks. Enjoy!
