I love my Easy-Chickpeasy Sandwich. There are a number of good recipes for mock tuna, a.k.a. “TuNO” or “Chickpea of the Sea” salads, but this version tastes delicious while being super easy to make. I tear up a sheet of nori in it for the tuna-ish flavor, and I add grapes for a complementing sweetness.
