This linguine pasta dish is a delightful fusion of earthy mushrooms, vibrant spinach, and savory Parmesan cheese, all brought together in a light olive oil and garlic sauce. It's a quick and flavorful meal that's perfect for busy weeknights or special occasions.
Ingredients: 8 oz linguine pasta. 2 tbsp olive oil. 3 cloves garlic, minced. 8 oz mushrooms, sliced. 4 cups fresh spinach leaves. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Red pepper flakes optional.
Instructions: Follow the directions on the package to cook the linguine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Put mushrooms slices in the pan and cook for about 5 to 7 minutes, until they dry out and start to turn brown. Put in some fresh spinach leaves and cook them for about two to three minutes, until they wilt. Add the cooked linguine to the pan with the spinach and mushrooms. Mix things together well. You can add red pepper flakes, salt, and pepper to taste. Add two more minutes of cooking. Add the grated Parmesan cheese to the pasta and mix it around until the cheese is spread out evenly. If you want, you can top the hot dish with extra Parmesan cheese.
