Mojo Potatoes are flavorful and crispy potato wedges seasoned with a zesty blend of spices and fresh lime juice, creating a delightful side dish or snack.
Ingredients: 4 large potatoes, washed and cut into wedges. 3 tablespoons olive oil. 3 cloves garlic, minced. 1 teaspoon smoked paprika. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt to taste. Juice of 1 lime. 2 tablespoons chopped fresh cilantro.
Instructions: Warm the oven up to 425F 220C. Mix the potato wedges with smoked paprika, cumin, chili powder, olive oil, and salt in a large bowl until they are well covered. Place the potato wedges in a single layer on a baking sheet. After the oven is hot, bake the potatoes for 25 to 30 minutes, flipping them over halfway through, until they are golden brown and crispy. Take them out of the oven and sprinkle lime juice on top of the hot potatoes. Before you serve, sprinkle with chopped cilantro.
