This mixed seafood paella smells and tastes great and brings the sea to your table. Soft shrimp, mussels, clams, and squid are served with savory rice that has been spiced with saffron and smoked paprika. Great for a special occasion or as a treat during the week!
Ingredients: 1 cup arborio rice. 2 cups seafood broth. 1/2 cup white wine. 1/2 cup diced onion. 2 cloves garlic, minced. 1 red bell pepper, diced. 1/2 cup diced tomatoes. 1/2 teaspoon smoked paprika. 1/2 teaspoon saffron threads. 1/2 pound large shrimp, peeled and deveined. 1/2 pound mussels, cleaned and debearded. 1/2 pound clams, cleaned. 1/2 pound squid, cleaned and sliced. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large paella pan or skillet, heat some olive oil over medium heat. Add diced onion, minced garlic, and diced red bell pepper. Saut until softened. Stir in diced tomatoes, smoked paprika, and saffron threads. Cook for 2 minutes. Add arborio rice to the pan and stir to coat with the vegetable mixture. Pour in seafood broth and white wine. Bring to a simmer. Arrange shrimp, mussels, clams, and squid over the rice. Cover and cook for 15-20 minutes or until the rice is tender and seafood is cooked through. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
