Ingredients: 1 cup cooked rice. 1 cup cooked black beans. 1 cup cooked ground beef or meat substitute. 1/2 cup shredded cheddar cheese. 1/4 cup diced tomatoes. 1/4 cup diced onions. 1/4 cup diced bell peppers. 1/4 cup diced avocado. 1/4 cup sour cream. 1/4 cup salsa. 1/2 teaspoon cumin powder. 1/2 teaspoon chili powder. Salt and pepper to taste. Mini flour tortillas.
Instructions: In a skillet, cook the ground beef or meat substitute until browned. Season with cumin, chili powder, salt, and pepper. Warm the mini flour tortillas in a microwave or on a skillet for a few seconds. To assemble, place a spoonful of cooked rice in the center of each mini tortilla. Top with black beans, ground beef or meat substitute, shredded cheddar cheese, diced tomatoes, onions, bell peppers, avocado, sour cream, and salsa.
