I did make some tweaks so I’ll list below how I make it. I just didn’t want to post their ideas as my own.
Muffin Base Recipe:
Dry Ingredients
140g Fiber Gourmet all purpose flour
100g whey protein (the base flavor I use is usually vanilla but if doing another flavor, use what you want! I recommend adding 2-3 tbsp of unsweetened cocoa powder if doing chocolate flavored base for a richer taste even if you use chocolate protein powder)
55g Swerve granulated sugar
1¼ tsp baking powder
¼ tsp baking soda
½ tsp salt
8g sugar free pudding mix (vanilla, cheesecake, or chocolate depending on base flavor desired)
Wet Ingredients
2 large eggs
300g Greek yogurt (I use the friendly farms vanilla no sugar added but you can use plain or whatever you want)
180ml unsweetened vanilla almond milk
30g country crock lite butter spread, softened
1 tsp vegetable glycerin (got mine at Michael’s… not 100% necessary but so nice to use it because it keeps them moist after you store them in the fridge)
Steps followed as she described in the video. Except! I core the muffins from the top so it’s easier and I use my own icing recipe.
My fillings have been either Polaner sugar free fiber added jams for a fruit filling or chocolate filling (swerve confectioner’s sugar, unsweetened cocoa powder, 1 tbsp country crock spread, 2 tbsp whipped cream cheese, and almond milk added until desired consistency).
I use my own icing recipe. It’s 5 tbsp of whipped cream cheese with 1 tbsp country crock lite spread. Whip those together, add a splash of vanilla, then add swerve confectioner’s sugar until the desired consistency. Thin with almond milk. This is the same icing I use for my cinnamon rolls, I just keep this one thicker by using less almond milk to thin.
