This is a colorful and healthy take on a traditional Middle Eastern dish. It makes a great breakfast or brunch because it's full of fresh greens, fragrant spices, and perfectly cooked eggs.
Ingredients: 2 tbsp olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 green bell pepper, chopped. 1 jalapeo pepper, diced optional. 1 tsp cumin. 1 tsp paprika. 1/2 tsp salt. 1/4 tsp black pepper. 4 cups fresh spinach, chopped. 1 cup fresh cilantro, chopped. 1 cup fresh parsley, chopped. 4 large eggs. 1/2 cup feta cheese, crumbled. 1/4 cup Greek yogurt optional. Salt and pepper to taste.
Instructions: Warm up a big pan with olive oil over medium-low heat. For about three minutes, or until the onion is clear, add the chopped onion. When you're done, add the diced jalapeo, chopped green bell pepper, and minced garlic. For another two to three minutes, cook. Salt and black pepper should be added. Use a stir to mix. Chopped spinach, cilantro, and parsley should be added. Mix the ingredients well and cook until the spinach is wilted. With a spoon, make small holes in the spinach mixture. Then, crack an egg into each hole. The egg whites should be set after 4 to 5 minutes of cooking with the lid on the pan. The yolks should still be runny. Add some crumbled feta cheese on top of the eggs. No need to: Sprinkle with Greek yogurt and salt and pepper to taste. Serve with the dish. Have fun with your tasty Green Shakshuka!
