Ingredients: 2 lbs beef sirloin, thinly sliced. 1 large onion, thinly sliced. 1 green bell pepper, thinly sliced. 1 red bell pepper, thinly sliced. 2 cups beef broth. 2 tablespoons Worcestershire sauce. 2 cloves garlic, minced. Salt and pepper to taste. 6 hoagie rolls. 12 slices provolone cheese.
Instructions: In a crockpot, layer the beef slices at the bottom. Add sliced onions and bell peppers on top of the beef. In a bowl, mix beef broth, Worcestershire sauce, minced garlic, salt, and pepper. Pour this mixture over the beef and vegetables. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender. Preheat the oven broiler. Split the hoagie rolls and place them on a baking sheet. Using a slotted spoon, fill each roll with the beef and vegetable mixture, then top with 2 slices of provolone cheese. Place the baking sheet under the broiler for 2-3 minutes, until the cheese is melted and bubbly. Serve hot and enjoy!
