This hearty Italian sausage soup is packed with flavor and perfect for a comforting meal. The slow cooker does all the work, making it an easy option for busy days.
Ingredients: 1 lb Italian sausage, casings removed. 1 onion, diced. 3 cloves garlic, minced. 4 cups chicken broth. 1 can 14.5 oz diced tomatoes. 1 can 15 oz cannellini beans, drained and rinsed. 2 cups chopped spinach. 1 teaspoon dried basil. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: In a skillet, cook Italian sausage over medium heat until browned, breaking it into small pieces. Drain excess fat. Transfer cooked sausage to a slow cooker. Add diced onion, minced garlic, chicken broth, diced tomatoes, cannellini beans, chopped spinach, dried basil, and dried oregano. Stir well to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Season with salt and pepper to taste before serving.
