Ingredients: 1 cup canned pumpkin puree. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup maple syrup. 1/4 cup vegetable oil. 2 large eggs. 1 tsp vanilla extract. 2 cups all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground ginger. 1/2 cup buttermilk. For the maple cream filling:. 1/2 cup heavy cream. 2 tbsp maple syrup. 1/2 cup confectioners' sugar. For frying:. Vegetable oil.
Instructions: Pumpkin puree, eggs, brown sugar, maple syrup, granulated sugar, and vanilla extract should all be combined in a big mixing bowl. Blend until thoroughly blended. Mix the flour, baking soda, baking powder, salt, and spices ginger, cloves, nutmeg, and cinnamon in a different bowl. Add the dry ingredients to the wet ingredients gradually, starting and ending with the dry ingredients and alternating with buttermilk. Blend until barely combined. Avoid over-mixing. Preheat vegetable oil to 350F 175C in a deep fryer or heavy-bottomed pot. Using a piping bag fitted with a large round tip, scoop the doughnut batter or use a Ziploc bag with the corner cut off. Forming doughnuts, pipe the batter into the heated oil. Fry for 2 to 3 minutes on each side, or until golden brown. Take out and let dry on paper towels. Beat the heavy cream until it begins to thicken for the maple cream filling. Stir in the confectioners' sugar and maple syrup. Beat until peaks become stiff. After the doughnuts have cooled a little, use a pastry bag or a small knife to make a hole in each doughnut and inject the cream filling into it.
