I don't think Emmrich would ever throw a punch but not in a "he'd never resort to violence" kind of way. Rather: It's hard on the knuckles and with rings like his he's likely to get himself hurt.
But mark my words: You get him angry enough, he *will* whack people with his staff.
It doesn't happen often. Emmrich could hardly be described as hot-headed. But there are rumors going around the Necropolis of an incident when a visiting nobleman felt bothered by Manfred's presence in one of the libraries and had his servants remove his skull.
To Emmrich's credit: He tried a diplomatic approach first. To someone who's never experienced his usual demeanor, it might even have seemed like he asked nicely.
But when that didn't work, the aristocratic visitor spent the rest of his time at the necropolis with a nasty gash across his forehead. To students of professor Volkarin, the outline of the mark seems vaguely familiar. One of them puts two and two together the next day in class. Emmrich hears the whispers behind his back. He never confirms or denies anything - it wouldn't be proper for someone who is meant to be an example to young people. But he knows about the rumours. And he'd be lying if he said he wasn't a little proud of his newfound reputation.
P.S.: I think he would absolutely be one of those professors who you could goad into passionate semi-political rants at the end of the class. And if you bring up the time he smacked an aristocrat in the face in one of those moments, well. He still won't explicitely confirm it. But there'll be a twinkle in his eye and a self-satisfied humm in his voice.
All this to say: I think he absolutely would resort to physical violence when someone comes for his son and/or spouce. Not just because it's more satisfying than magic in those moments, but also because it sends a clear message. And Emmrich always chooses his words carefully. Same goes for his means of knocking you unconscious.

I was worried my boyfriend would sacrifice Manfred because he’s not necessarily the sentimental one to prioritize Sweet Baby Boy over Badass Powerful Skeleton but this is an extremely based take about the dragon age universe and Veilguard especially.
(No shade to Lich Emmrich enjoyers, obviously canon doesn’t give us any sign of him or the other Lich lords being dangerous but the healthy distrust is still valid after everything Thedas has been through)
