I learned today that a purple skinned potato is purple fleshed as well. I was going to make fries with a bunch of mixed fingerling potatoes I got this weekend, and I'll admit I was charmed by the pretty colors without even thinking about how different types of potatoes have different applications- Like mashed or scalloped or sliced and baked. So now I have a whole slew of pretty potatoes all sliced up, in cold water to get the starch off, and I'm seriously worried I'm gonna bork up my fries and my pretty potatoes. I usually do garlic, rosemary and olive oil.
Anyone have any idea if I should just power through and hope for the best-'tatoes are 'tatoes after all- or pull the purple ones out for later?
