Non-enzymatic browning

"As the temperature of the bread increases, oven spring occurs, enzymes are deactivated, protein denaturation occurs, moisture content is reduced, starch gelatinization happens, and the bread browns due to Maillard reactions. Maillard reactions occur between a carbonyl compound, usually a reducing sugar, and an amine, usually an amino acid, a peptide or protein. In contrast, in caramelization, the sugars oxidize, lending a nutty flavor and brown color to the baked product."

Lo que no puede ser dicho, puede ser sugerido. No hay mejor momento para habitar la poesía, para señalar la silueta de lo invisible, para mostrar que nunca ha sido un todo sólido, sino un algo viscoso del que podemos arrancar múltiples formas. Que aquello que se nos escapa no solo está formado de sinsentidos mayúsculos (Dios, Verdad, Muerte) sino, quizás, de pequeños gestos que a fuerza de impresiones mudas han alcanzado la invisibilidad —la santidad, dirían algunos— de las rocas. Que también un cierto orden puede ocultarse a sí mismo por una serie de omisiones que, como una enfermedad congénita, hemos ido heredando a lo largo de generaciones de ojos castrados, de sentidos anulados por quién sabe qué horror.
¿Y cómo desocultar lo oculto? No lo sé, no soy un buen poeta. Pero me viene a la cabeza un verso de Chantal Maillard: «no existe la muerte, existen los muertos». Quizás ese sea el camino.
