This pressure cooker recipe is just the right amount of spicy and sweet. Thanks to the magic of pressure cooking, the chicken is so tender that it almost melts in your mouth. It has a great mix of flavors that will please your palate.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup chicken broth. 1/2 cup honey. 1/4 cup soy sauce. 2 tablespoons Sriracha sauce. 1 tablespoon minced garlic. 1 teaspoon ginger powder. 1/2 teaspoon crushed red pepper flakes. Salt and pepper to taste. 2 tablespoons vegetable oil. 2 tablespoons cornstarch optional, for thickening.
Instructions: Season chicken breasts with salt and pepper. In the pressure cooker, heat vegetable oil using the 'Saute' function. Add chicken breasts and sear on both sides until golden brown. In a bowl, mix chicken broth, honey, soy sauce, Sriracha sauce, minced garlic, ginger powder, and red pepper flakes. Pour the sauce over the seared chicken in the pressure cooker. Close and lock the lid, set the pressure cooker to 'Poultry' or 'High Pressure,' and cook for 8 minutes. Allow natural pressure release for 5 minutes, then manually release any remaining pressure. If desired, mix cornstarch with a little water to create a slurry and stir it into the sauce to thicken. Serve the spicy-sweet chicken over rice or with your favorite side dishes. Garnish with chopped green onions or sesame seeds, if desired.
