French Lentil Salad
Brown, green, red, French - lentils come in all sizes and colors...there's even an annual lentil festival in late August located in the SE corner of Washington state - yummmm. Â They have tastings, cooking contests, all sorts of good fun. Â Back to lentils, they cook fast which is a boon to my need-to-make-dinner-fast food prep style. Â They also are high in potassium, fiber, protein, and folate (a B vitamin). Â All those are great features but it's the speed in preparation that attracts me the most as well as the fact that this is great served as a side dish with a slice of pork and melon for a meal or as a take along meal to work or a potluck or where ever life takes you. Salad:
6 c. water
2 c. French green lentils
1 bay leaf
1/2 t. thyme, powdered
dash kosher salt
1 c. radishes, sliced thin
2 c. carrots, sliced thin
2 c. celery, sliced thin
1 c. red onion, sliced thin into crescents Dressing:
1 lg. shallot, diced
1 T. red wine vinegar
1 T. lemon juice
2 T. Spicy Mustard
dash kosher salt
1/2 t. ground black pepper
3 T. oil For the salad, in a large pot add lentils, water, by leaf and thyme.  Bring to a boil then turn to simmer for 15 min. until the lentils are just beginning to be tender. Add radishes, carrots, celery, and red onion to lentils, cover cooking 10 min. approx.until the carrots are tender crisp. Drain off any excess liquid.
