Cooked Wine is a typical product of Macerata and Ascoli, it is found in the countryside of Loro Piceno in a profile of history, culture and tradition. The grapes to prepare the Cooked Wine are the local white and black ones: Trebbiano, Sangiovese and Montepulciano. The grapes are crushed and the must thus obtained is placed in copper boilers and boiled slowly with wood over direct heat for about 10-12 hours, until a drop of between 30% and 50% of its initial volume is reached . Once cooked, the must is decanted while still hot in wooden barrels and left to age in a period of not less than 5 years. Cooked Wine has a dark amber color; a fruity aroma with hints of caramel and honey; a soft, sweet and persistent flavor and an alcohol content ranging from 12% to 14%. Cooked wine is a great meditation wine, but also an excellent dessert wine and goes very well with a large variety of desserts and in particular with all dry pastries. Rechi delizia col tuo sapore, rechi allegria, metti vigore; svegli la lingua e la passione, di tutto il mondo ti fai padrone. Sei d'un sapore inconfondibile e d'un effetto imprevedibile, a chi ti beve un po' di più (siccome è facile mandarti giù) tu farai dire cose assai strambe ma sta tranquillo, non dà alle gambe.
