Rustic Simplicity
I once favored saison because it was a weird beer style with idiosyncratic yeast strains and open to so many different interpretations. It was fun seeing how complex and different each bottle could be. But I’m starting to appreciate these farmhouse ales for their simplicity.
Logsdon Seizoen is a great example of a simple beer with lots of character. It starts when you open the bottle, and you get that first whiff of yeast, all spicy and warm. Then you see that creamy head when you pour it. It looks great and doesn’t take a lot of effort to swirl and swish to get a good sniff of it. The flavor is simple enough – a note of green apple, crisp and clean, a pinch of pepper, and the punch of cloves. It’s full on the tongue, fizzy yet creamy.Â
Saison seems like a whole new thing when you’re used to drinking pale ale and lager. But a good saison drinks the same as a nice golden ale or pilsner. It should be balanced, easy drinking, but flavorful.  A saison gets most of it’s flavor from yeast, and pilsner focuses on malt and hops. The goal is the same. It’s a working beer, a beer to have a chat over, a beer to compliment a meal.
