These cheesy, bacon-topped loaded mashed potato balls make the ideal snack or side dish for any occasion. They have a crunchy exterior, a creamy interior, and an abundance of flavor. These potato balls are made even more delicious by the addition of bacon bits and cheddar cheese.
Ingredients: 2 cups mashed potatoes. 1/2 cup shredded cheddar cheese. 1/4 cup crumbled bacon bits. 1/4 cup chopped green onions. 1/4 cup breadcrumbs. 1 egg, beaten. Salt and pepper to taste. Oil for frying.
Instructions: Mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, breadcrumbs, beaten egg, and salt and pepper to taste should all be combined in a mixing bowl. Stir everything until thoroughly mixed. Form the mixture into tiny balls with a diameter of 1-2 inches using your hands. In a deep fryer, heat the oil over medium-high heat. Mashed potato balls should be carefully dropped into hot oil and fried for three to four minutes per batch, or until golden brown and crispy. After taking the potato balls out of the oil, drain any extra oil by placing them on a plate covered with paper towels.
