Making loaded mashed potato cakes is a tasty way to use up extra mashed potatoes. With cheese, bacon, and green onions inside, these crispy cakes are a must-have for any meal.
Ingredients: 2 cups mashed potatoes. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup cooked and crumbled bacon. 1/4 cup all-purpose flour. 1 egg, beaten. 1/4 cup breadcrumbs. Salt and pepper to taste. Vegetable oil for frying.
Instructions: Put mashed potatoes, cheddar cheese, green onions, bacon, flour, and an egg that has been beaten together in a bowl. Mix everything together well. Add pepper and salt to taste. Little patties should be made from the mixture. Sprinkle breadcrumbs on top of each patty. Put oil in a pan and heat it over medium-low heat. It should take about three to four minutes on each side to fry the potato cakes until they are golden brown. Take it out of the pan and put it on a plate lined with paper towels to drain the extra oil. Enjoy while hot!
