Loaded Breakfast Sweet Potatoes are a nutritious and satisfying meal perfect for starting your day right. Sweet potatoes are baked until tender and topped with eggs, bacon, cheese, avocado, and green onions for a flavorful breakfast that's packed with protein and vitamins.
Ingredients: 4 medium sweet potatoes. 4 eggs. 1/2 cup cooked bacon, crumbled. 1/2 cup shredded cheddar cheese. 1 avocado, sliced. 1/4 cup chopped green onions. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Clean the sweet potatoes and use a fork to poke several holes in each one. Put the sweet potatoes on a baking sheet and bake them until they are soft, about 45 to 60 minutes. Set the eggs aside to cook however you like while the sweet potatoes are baking. Make a cut down the middle of each sweet potato and use a fork to fluff up the inside. Put an egg, bacon crumbles, cheese, avocado slices, and chopped green onions on top of each sweet potato. Add pepper and salt to taste. Enjoy while hot!
