Ingredients: 1 lb white fish fillets. 1 cup all-purpose flour. 1 cup beer light beer works well. 1 tsp baking powder. 1/2 tsp salt. 1/2 tsp paprika. 1/4 tsp cayenne pepper. 1 cup shredded cabbage. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1/4 cup sour cream. 2 tbsp mayonnaise. 1 lime, juiced. 8 small corn tortillas. Vegetable oil for frying. Salt and pepper to taste.
Instructions: Put flour, baking powder, salt, paprika, and cayenne pepper in a bowl and mix them together. Whisk the batter until it is smooth as you slowly add the beer. Take a break for 10 to 15 minutes. In a deep pan or fryer, heat vegetable oil to 350F 175C. Allow the extra beer batter to drip off each fish fillet, then carefully put it in the hot oil. It should take about 4 to 5 minutes per side to fry the fish until it's golden brown and crispy. Place the drained food on paper towels and season with salt and pepper. To make a sauce, mix sour cream, mayonnaise, and lime juice in a small bowl. Warm up the corn tortillas and put a piece of fish that has been dipped in beer on each one.
