This quick and simple Paleo stir-fry of chicken and veggies is a tasty and nourishing meal. This dish is ideal for anyone following a Paleo lifestyle because it is full of protein from the chicken and lots of vitamins and minerals from the vibrant assortment of vegetables.
Ingredients: 2 tbsp coconut oil. 1 lb chicken breast, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 small onion, sliced. 3 cloves garlic, minced. 1-inch piece of ginger, grated. 1/4 cup coconut aminos. 2 tbsp apple cider vinegar. 1 tsp arrowroot powder. Salt and pepper, to taste. Optional: sesame seeds and green onions for garnish.
Instructions: Combine arrowroot powder, apple cider vinegar, and coconut aminos in a small bowl. Put aside. Heat the coconut oil in a big skillet or wok over medium-high heat. After adding the chicken slices, cook for 5 to 6 minutes, or until browned. Take out and set aside the chicken from the skillet. If necessary, add extra coconut oil to the same skillet and add the onion, bell peppers, and broccoli. Stir-fry the vegetables for 45 minutes, or until they are crisp-tender. Cook the grated ginger and minced garlic in the skillet for one to two more minutes, or until fragrant. Place the cooked chicken back in the skillet with the vegetables, and cover the chicken with the prepared sauce. To evenly coat everything, give it a good stir. Simmer for a further two to three minutes, or until the sauce has slightly thickened and the food is thoroughly cooked. To taste, add salt and pepper for seasoning. If desired, garnish with chopped green onions and sesame seeds. Enjoy while hot!
