Ingredients: 1 lb ground beef. 1 small onion, chopped. 1 bell pepper, chopped. 2 cloves garlic, minced. 1 packet taco seasoning mix. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 cup diced tomatoes canned or fresh. 1 cup shredded cheddar cheese. Tortilla chips for serving. Sour cream and salsa for garnish.
Instructions: Cook the ground beef in a large skillet over medium-high heat until it turns brown and breaks up. Cut up the onion, bell pepper, and garlic and add them to the pan. After two to three minutes, the vegetables should be soft. Add the black beans, corn, diced tomatoes, and taco seasoning mix. Cook for another 5 to 7 minutes, stirring every now and then. Add shredded cheddar cheese to the top of the pan and put the lid on top. It needs to cook for two to three minutes so the cheese melts and bubbles. Use tortilla chips to scoop up the hot taco skillet and serve it. You can add sour cream and salsa on top if you want to. Have fun with your quick and tasty taco skillet dinner!
