New Oysters Available in the USA. Oysters from The Netherlands - lovingly grown by @premier.seafarmers have finally landed in NYC. Dutch Flats - The Dutch Flats - Ostrea edulis - toothsome firm, slight crunchy in the texture with earthy notes. Briny WetStone Dry Tannic finish mineral mineral mineral. Krijn (pronounced “Cr-ine” - like wine with a Kr..) Magallana “(Crassostrea) gigas - “”Ocean, sweet cream, melon, sea greens, mushroom and cucumber freshness. The exciting difference compared to all other oysters is the salt. The taste of European Saline is much different than that of North American shores, will be very “European” bright and minerality. “But why Import Oysters?” Parallelling the wine world, oysters in the global perspective would be a comparison of “old world wine” with “New World wine” based on the same grape varietal. “It’s all about the flavour experience.” The flavour of oyster comes from three things.
