Tagliatelles are a type of dough (pasta) elongated, small width and flattened form that make up the set of asciutte pastes (dried pasta) of Italian origin. Although those that are known throughout Europe and other places come directly from Italy, there is a controversy over their origin since in China noodles similar to noodles and spaghetti have been prepared for more than a millennium before in Italy.
For some the tagliatelle was created by a talented chef of the court, who was inspired by the hair of Lucrecia d'Este on the occasion of her marriage to Annibale II Bentivoglio, in 1487. But it was all a joke spread by the humorist Augusto Majani in 1931.
The recipe was called tagliolini di pasta e sugo, alla maniera di Zafiran (tagliolini pasta and sauce in the manner of Zafiran) and was served in silver dishes. Over the years, this type of noodles have become a very common food.
