Pepperweed Pesto
(adapted from this source)
1 packed cup young tender leaves, stems, and seed pods of Lepidium spp (especially L. virginicum or L. densiflorum)
1 clove garlic
2 tablespoons roughly chopped pecan meat
half teaspoon salt
1/3 cup olive oil
1/4 cup grated Parmesan cheese
Add the Lepidium, garlic, pecans, and salt to a food processor and pulse. Slowly add in the oil while pulsing. Add the cheese and blend all of the ingredients to desired consistency.
To use, mix in with freshly cooked pasta and serve. Alternately, mix equal parts pesto and butter to spread onto bread, baking in a low-temperature oven to warm (like garlic bread).
