The tart cranberries and bright lemon flavor in these Lemon Cranberry Muffins go so well together. The lemon glaze gives these moist and fluffy muffins just the right amount of sweetness. They're great for breakfast or as a snack.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, melted. 1/2 cup milk. 2 eggs. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup dried cranberries. Zest of 2 lemons. Juice of 1 lemon. 1/2 cup powdered sugar.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with paper liners. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, mix together the melted butter, milk, eggs, lemon zest, and lemon juice. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the dried cranberries. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. While the muffins are baking, prepare the lemon glaze. In a small bowl, mix together the powdered sugar and enough lemon juice to create a smooth glaze. Once the muffins are done, remove them from the oven and allow them to cool for a few minutes in the muffin tin. Drizzle the lemon glaze over the warm muffins, allowing it to drip down the sides.
