Koicha 濃茶 Parfait

The other day, I acquired a new koicha-grade matcha. Full of rich steamed edamame umami flavor and a pleasant pistachio nuttiness and virtually no astringency, it makes a savory koicha and a smooth usucha. I prepared it as an usucha and added double the amount of powder I usually use—because sometimes it’s nice to give yourself a little extra!
I’m so thankful to greet the changing of seasons with beautiful tea and wonderful company. The weather is getting colder where I live, which means more hot tea is on the way!
Last night’s tea was a koicha prepared using the limited reserve matcha I referred to in this post. I’ve been waiting a long time to break out this tea, since I very rarely have matcha of such fine quality around the house.
Rich in the hikari cultivar, the first thing you notice about this matcha is how smooth and flavorful it is. The savoriness evokes salted edamame and buttered mashed potatoes. Astringency is there, but much less pronounced than in other koicha I’ve had. The characteristic of the astringency is more like skyr; at once milky, creamy, viscous, and pleasantly bitter.
