Finally decided to make a brisket. This bad boy was supposed to only take 8 or 9 hours, but for some reason it took nearly 14 lol... It was worth it though! The rub is a blend of spices that I ground using a mortar and pestle. It includes black peppercorn, white peppercorn, Szechuan pepper, cayenne pepper, salt, sugar, garlic powder, marjoram, cumin... I think that was it. The major ingredients though were the peppercorns. The combination does a number on the tastebuds lol, but oh so good! The brisket was rinsed, pat dry, then thoroughly rubbed down. Then I threw it in the fridge to rest overnight. Next morning, stuck the thermometer in and popped it into a 225 degree oven (not wrapped in foil or in a bag) and went about my business.
