American hero, Dr. Kin Yamei, the 1st ethnically Chinese woman to attend university in the United States. She is credited with introducing soy to the U.S. and work with the USDA to end food insecurity in the early 1900s. She lived more of her life in the U.S. than in China, but due to laws at the time she was not able to become a U.S. citizen.
